| Chef John sears every steak at medium heat, never high. The pan gets a long, slow preheat and just a thin coat of neutral oil; enough to sear the meat without scorching it before it hits temperature. When the steak is 10-15 degrees out from done, butter, garlic, and herbs go in for a quick baste. On bigger cuts, he'll even pull the pan off the heat early and let the steak finish resting right there, soaking up all that butter and herb flavor. |

| Break Cast Iron in with bacon: start it on low heat, then move it to the oven where it will cook more evenly. Cast iron is perfect for moving from stovetop to oven. |
